Pancakes, though simple in nature, are one of the most beloved breakfast foods worldwide. But what exactly makes for the ultimate pancake? It’s more than just flour, eggs, and milk—it’s a careful balance of texture, flavor, creativity and most of all, LOVE.

I love pancakes, I always have. Pancakes are my top 5 food. The crazy thing is, I make a lousy pancake. I have been on a quest to find that perfect, in my eyes and taste buds pancake. With that being said, we all know, the taste and love for something are always subjective. Lovers of pancakes all have there favorite locations, such as Johnny Pancakes, Spring Garden, Stockholm Inn just to name a few.

So I decided to find the state lines best pancakes, it might take me 6 months, or it might take a year but I am looking for the top five, along with my tastebuds. My first pancake trip started at , the Sunrise in Byron, Illinois, and now I am on to my fifth pancake destination, Egg One Five in Pecatonica. So, do they have the best pancakes so far?

Also, I decided to rate them on a scale of 1 to 10 and, would I drive 50 miles or less for these cakes. Also, keep in mind, this is just pancakes, not omelettes or skillets.

THE VERDICT!

It's at the bottom of this blog, just waiting for you.

Texture is key. The ultimate pancake is fluffy, light, and golden brown. Achieving that cloud-like fluffiness requires a good batter. Using a combination of all-purpose flour and a leavening agent like baking powder creates that airy lift. Buttermilk is a secret weapon—it gives pancakes a tangy richness and reacts with the baking powder for an even better rise. Overmixing the batter can lead to dense pancakes, so a few lumps are okay!

Flavor takes it to the next level. While classic pancakes are delicious, flavoring the batter with vanilla extract or a pinch of cinnamon adds depth. For an indulgent twist, adding lemon zest or a handful of blueberries creates a burst of freshness. Chocolate chips or nuts can elevate them for a sweeter or crunchier bite.

The perfect cook is where many pancakes fall short. Cook pancakes on medium heat to ensure they brown evenly without burning. Watch for bubbles on the surface as the cue to flip. Each side should be golden with a slightly crispy edge.

Finally, toppings are the cherry on top—literally! A drizzle of pure maple syrup is a must, but don’t stop there. Whipped cream, fresh fruits, or even savory options like crispy bacon can take pancakes from delicious to extraordinary.

THE VERDICT!

9.8  out of 10 and yes, I would drive 50 miles miles for these pancakes.

BRAVO, EXCELLENT! EGG ONE FIVE! The pancakes had so much flavor, along with a nice hint of vanilla. Now if you order just the pancakes, from what I was told, they are even bigger than I had, which is the normal size. They also came with this cute little bottle that held the maple syrup. Next, I have to mention was the bacon, OMG, thick cut and just cooked to perfection, loads of flavor. The ham so good, full of flavor and a nice size piece. The cheesy hashbrowns had two different kinds of cheese on them, were just perfect, and my over-medium eggs, were done perfectly. Medium eggs as I know when I cook them can be tricky as its easy to make the yolks hard. Last thing, the coffee and service was spot on. This breakfast was made with love and passion. If you are looking for a new place to try, take the little drive to Pecatonica. The location is in the old Stuckeys/ Ghost Town. There was nothing at all to complain about, well maybe one, I was a bit sad when the breakfast was all gone. I am looking forward to returning and trying out lunch.  Make sure to check out the pictures below.

Let me know where I should go next.
