Better yet, you won't even have to deal with the headache that is Chicago traffic.
All you'll need to do is drive north from Rockford, more specifically, Madison Wisconsin.
That's where the Underground Butcher resides. The Underground Butcher is getting some props too from Thrillist.
Underground Butcher is the best of the best, a place where they'll wrap raw cuts to go, but where you're advised to take a sandwich for the road. here's Texas-style brisket paired with decidedly un-Texas (but tasty!) fixin's of kimchi and whole-grain mustard. There's their house salami on a baguette with creamy Pleasant Ridge Reserve cheese, Dijon and aioli...You don't have to enter this place with a "thank you" card, but you might want to.
