This amazing brunch is so easy to make, even the kids can make it.

I love brunch. It's my favorite meal by far. Sweet, savory, mimosas and I still get to sleep in! Sign me up!

I first made this recipe a few years ago for Christmas Breakfast and I couldn't believe how simple, quick and delicious it is. I made it again for Easter this year when my husband and I went to my mother-in-laws house for brunch. Let me be the first to say it was a huge hit! It was even requested specially by my mother-in-law!

I think this would be the perfect breakfast to make for mom on Mother's Day. Mom, Dad and children alike will agree its yummy, cheesy and oh so good.

Here's what you need:

  • 1 large bag of frozen hash-browns
  • 1 bag of shredded cheese, cheddar
  • 1 medium onion, diced
  • 1 pound of bacon
  • 1 cup of milk
  • 12 eggs

Did I mention yet that you will need a crock-pot? Yes... it's literally that easy. Set it and forget it!

1. Cook 1 pound of bacon. You can either fry it in a pan on the stove or cook it in the oven like I did.

2. Add 1/3 of the hash-browns (frozen) to the bottom of the crock pot. I used a liner in my crock pot which makes clean up a breeze. If you are not using a crock pot liner I suggest greasing the bottom and sides of the container. I like to sprinkle a little pepper on this step, but you don't have to.

3. Next, add 1/3 of the bag of shredded cheese.

4. Next add some of the chopped onion.

5. Next, crumble some of the cooked bacon and add that on top!

6. Continue making these layers, much like lasagna, until it is full and topped with cheese.

7. Next, crack a dozen eggs into a bowl. Add 1 cup of milk and whisk together until smooth.

8. Pour egg mixture over the top of your layers in the crock pot. It will spread evenly into the different layers.

9. Set the crock pot to low for 7-8 hours or high for 3-4 hours.

10. Scoop with large spoon and enjoy!

It's literally that simple. I love this breakfast/brunch idea. Pair it with fresh fruit and Mom will be sure to love it.

Feel free to experiment by adding different types of cheese, meat or vegetables. Doesn't tomatoes, feta cheese and spinach sound so good? You can make your layers any way you want.
