First we had wine and cupcakes, now bacon and cookies? This is your best dessert line-up yet. 

When I started the 25 Days of Desserts, Steve Shannon asked me to make something with bacon in it. I didn't have my entire list set just yet so it was absolutely do-able.

Then, my mom had a cookies exchange with her sewing friends and one of them made bacon cookies. She gave me the recipe and now they're baked ready to go for Christmas.

My mom was not about to let me fry bacon in her kitchen yesterday, so we took the store bought bacon short cut, but if you're up to the challenge, the recipe below calls for baking the bacon the day you make the cookies.

I don't know where these originated, but my mom's friend Laura shared the recipe with the group.

Ingredients

6 slices maple-cured bacon, chopped

1 1/2 cups white sugar

1 cup softened butter

2 teaspoons vanilla extract

2 cups semi-sweet chocolate chunks

2 cups all-purpose flour

2/3 cup cocoa powder

3/4 teaspoon baking soda

1/4 teaspoon salt

2 eggs

Directions

  1. Preheat an oven to 350
  2. Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Crumble. Beat the sugar, butter, eggs and vanilla with an electric mixer in a large bowl until fluffy and smooth. Stir in flour, cocoa powder, baking soda, and salt. Mix in the chocolate chips and bacon. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
  3. Bake for 10-12 minutes in the preheated oven. Let stand 5 minutes before transferring to wire racks to cool completely.
