I love pancakes, I always have. Pancakes are my top 5 food. My pancake making skills are surprisingly terrible. I embarked on a journey to discover the ideal pancake that would satisfy both my eyes and taste buds. The taste and love for something varies between individuals because both factors are subjective. Every pancake enthusiast has their favorite places like Johnny Pancakes and Spring Garden, and Stockholm Inn among others.

I've committed to a journey which could last up to 6 months or possibly extend for a year to discover the top five pancake destinations according to my taste preferences. I began my pancake journey at Sunrise in Byron, Illinois and have since reached my seventh stop at Mary's Market in Rockford. Have these pancakes taken the top place in my pancake journey so far?

I judged each pancake using a 1 to 10 scale and considered whether I would drive 50 miles or less to get them. This is just a pancake review without comparisons to omelettes or skillets.

Texture is key. The ideal pancake achieves a fluffy texture while remaining light and golden brown in color. To obtain pancakes that reach cloud-like fluffiness you need to use a well-prepared batter. The mixture of all-purpose flour and baking powder generates the essential lift for pancakes. Buttermilk serves as a secret ingredient because it adds tangy richness to pancakes while working with the baking powder to achieve superior rising results. When you overmix your pancake batter it becomes dense so leaving some lumps behind will not harm your pancakes.

THE ULTIMATE PANCAKE - A CULINARY MASTERPIECE
Flavor takes it to the next level. Though plain pancakes taste good basic vanilla extract or cinnamon in the batter makes them more complex. Lemon zest or fresh blueberries provide an indulgent burst of freshness when added to pancakes. Chocolate chips or nuts will enhance the flavor profile by adding sweetness and crunch.

Many pancakes lack the signature quality of perfect cooking. Using medium heat when cooking pancakes will help you achieve an even browning while preventing them from burning. Pay attention to bubbles forming on top because they indicate when to flip the pancake. Both sides of the pancake need to reach a golden brown color while developing a lightly crispy border.

Creating the ultimate pancake involves the perfect combination of technique, flavors, toppings and love to produce a breakfast that's fluffy, tasty and a touch indulgent.

The pancakes earned an 9.0 of 10 rating because I would travel 40 miles to enjoy them.

I have not had Mary's Markets breakfasts since it was Aunt Mary's, so it has been quite some time. On a side note, I still remember as a kid when it was called Uncle John's.

After taking my first bite I knew I was in for a treat. These were not good regular pancakes, these were for first class pancakes, full of flavor, almost melted in your mouth. I always have my girlfriend Lory take a bite to make sure good or bad, that my review is spot on. She agreed these were good. I only ordered one because I also saw an omelet that caught my eye, and the pancake came with it. The omelet had spinach and mushroom with swish cheese. The combo of pancake and omelet was just perfect. 

Thank you Mary's Market for such a fantastic breakfast, we will be back.
