Meet the Team Behind Illini SuperPop: U of I Science Meets Riggs Beer Company

Dr. Anthony Studer from the University of Illinois in Champaign, and a few brothers, Matt and Darin Riggs, of Riggs Beer Company in Urbana, have worked together to produce something called Illini SuperPop.

Food & Wine says it's a naturally savory, nutty, butter-free popcorn hybrid that sounds as complicated to make as you think.

The Problem With Regular Popcorn: And How Illini SuperPop Solves It

Studer began developing the product in 2018 to make popcorn focused on natural flavor rather than just toppings.

As an avid popcorn fan, the stuff by itself is bland. I know it's a healthier option to eat popcorn "air-popped," but most of the time it's tasteless.

This version appears to be the workaround, a hybrid that takes the best of both worlds and turns it into one thing.

For now, the only way to get your hands on Illini SuperPop is by heading to Champaign-Urbana.

It's only for sale at Riggs Beer Company and at all U of I sporting events.

Eight Years in the Making: Illinois Debuts a Revolutionary New Popcorn

There is a chance you might be able to grow your own, though, as Studer is hoping to make a trial for you to plant in your own backyard.
