January 29 is National Corn Chip Day! Let's all celebrate it's salty and crunchy awesomeness by making Frito's Waffles.

I first must point out that you can not confuse National Corn Chip Day with National Tortilla Chip Day which is in February. They are two totally different things.

Corn chips were first invented by Fritos. Legend has it, that C.E. "Elmer" Doolin was so upset that his tortilla chips wouldn't stay fresh enough in his store. According to NationalDayCalendar.com, in 1932, Doolin met a man who was selling fried corn chips. He paid the man $100 for his recipe and the rest was history.

I absolutely plan on celebrating National Corn Chip Day in the best way I know how. By eating Walking Tacos of course!

I was first introduced to this amazing meal while tailgating at a concert. The group of people next to us invited us to try some of their bountiful food and I've been hooked ever since.

All you need is the small bags of Fritos, taco meat and your favorite toppings.

Once you have cooked your taco meat, open the small bag of Fritos. I like to crush them up just a bit. Add some of your taco meat, cheese, lettuce, tomato and sour cream and grab a fork. I promise you will never eat tacos the same.

If that seems to simple for you, why not try making waffles using Fritos. Yes you heard me right!

Ingredients

1 1/4 cups millet flour
3/4 cup FRITOS® Original Corn Chips, crushed
1 tablespoon golden flaxmeal
1 tablespoon baking powder
1 cup milk
3 large egg yolks
1 teaspoon vanilla extract
1/3 cup melted butter
1/4 cup honey
3 large egg whites
1 pound strawberries, hulled and quartered
1/4 cup sugar
2 teaspoons cornstarch
1 teaspoon vanilla
Mascarpone cheese

Instructions

  1. Combine flour, FRITOS® Original Corn Chips, flaxmeal, baking powder, milk, egg yolks, vanilla, butter and honey in a blender container. Blend until smooth.
  2. In a medium bowl, beat egg whites until they form soft peaks. Fold flour mixture into beaten egg whites until incorporated, being careful not to deflate egg whites.
  3. Pour about 1/2 cup of batter onto greased, heated griddle and cook according to manufacturer's instructions. Repeat with remaining batter.
  4. Combine strawberries, sugar, cornstarch and vanilla in a medium saucepan. Heat over medium heat until juicy and thickened.
  5. Serve waffles with mascarpone cheese and warm strawberries.
Also, did I mention they are Gluten Free? I have to try this when I get home!
