New Rockford Bakery Makes Illinois’ Most Unique Ice Cream

Can you even guess what's in this ice cream cone?

I've eaten a lot of ice cream in my life... actually, at this point I've eaten a lot of ice cream this summer. But not until last Friday did I have the most unique ice cream on Earth.

Quixotic Bakery is now officially open for business at Rockford's Indoor City Market, so when I went to City Market I had to go inside and check it out!

Not only is Quixotic filled with cookies and candies, but delicious ice cream including the very unique 'Deep Space.'

While I'm usually a cookie dough or cookies and cream kind of girl, I couldn't pass up the chance to try this blue and chocolate ice cream.

And, well it was interesting.

But like GOOD interesting!

I wouldn't say it's my favorite ice cream flavor of all, but I do know some little kids who would love to give it a try.

Bonus points going out to Quixotic for selling one scoop in a sugar cone instead of a cake cone!

I usually feel obligated to get two scoops because I like sugar and waffle cones but Quixotic gives you one (very large) scoop for a few bucks in a perfect cone.
