Celebrate National Corn on the Cob Day in Rockford.

"June 11 of each year is the day to celebrate National Corn on the Cob Day. Fresh corn on the cob is a summertime treat that people from all corners of the United States look forward to as we start the picnic season."

Since it's officially National Corn on the Cob Day, it's time to celebrate in Rockford.

I'm a big fan of corn. Especially, fresh corn on the cob in the summer. It makes a great side dish for just about everything.

The best part is corn on the cob is very easy to get in Rockford this time of year. You can hit a local farmer's market, a vegetable stand, or a grocery store.

Plus, there are numerous corn boils that go on in the Rockford area all summer long. If you hit any of the fairs or festival, I suggest getting corn on the cob on a stick dipped in butter.

My old roommate & I were craving corn. He decided to have our own corn boil. We went to the store and bought a dozen ears of corn. We invited some friends, but nobody else could make it. We were hoping other people would show up with other dishes. Unfortunately, that didn't happen. All we had was corn, so we boiled it and ate it all ourselves. It was our own private corn boil.
